Reducing Carcinogens from Grilled Meats
Marinating chicken and other meats helps to reduce carcinogens from the cooking process. Marinating chicken and other meats for as few as twenty minutes before barbecuing also helps reduce heterocyclic anomes. A marinade consisting of a mixture of olive oil, lemon, cider vinegar, garlic, and mustard, for example, lowers cooking temperature, and the garlc contains phytochemicals that help to neutralize dangerous chemicals that may be produced.
